Trinidad is also known for many of its sweets and
cakes because they are rich in flavour and has been made and enjoyed for
generations. Cassava Pone is an all time
favourite among the young and young at heart.
It’s a sweet dish made mainly with cassava, coconut and pumpkin.
We spend money buying cassava pone these days as
many feel intimidated by it but it is really simple and easy to make. So try the recipe below and you will
recognize your pone is just as good as the bakery around the corner.
You will need:
(Serves 16)
3 cups grated cassava (yuca)
1 ½ cups grated coconut
1 ½ cups grated coconut
1 cup grated pumpkin
1 ¼ cups granulated sugar
2 tsp ground cinnamon or mixed spice
1 tsp vanilla extract

2 tbsp butter, melted
2 cups milk or water

½ cup raisins
Directions
1.
Mix cassava, coconut and pumpkin in a large bowl.
2. Add sugar, cinnamon, vanilla and melted butter to mixture.
3. Finally, add milk to ingredients and combine.
4. Pour into greased shallow pan (shape – totally up to you)
5.
Bake in a preheated oven at 350 degrees F or 190
degrees C until brown and firm to the touch.
Serve warm and enjoy!
