Food Tip#1: Make your own Green seasoning...




Trinis love to use fresh seasoning but nowadays they end up buying it to save time. These bottled seasonings cannot touch the real deal. Homemade seasoning gives much more flavour and you’re fully aware of all the ingredients. So don’t buy it, make it!
You have a wide variety of herbs, peppers and onions to choose from so you can’t go wrong, just add your favourite seasoning herbs.  I don’t own a grinder so I blend my seasoning and it stays for at least 2 weeks in the fridge.

                                                                                                                                                                                            Ingredients    
3 bunches chives
1 bunch celery
2 bunches chadon beni
6 medium onions
2 heads garlic
12 pimentos
3 tbsp. white vinegar

Preparation

1.   Wash chives, celery, pimentos and chadon beni.
2.   Remove seeds from pimentos. Peel onions and heads of garlic.
3.   Chop seasonings into smaller pieces to fit into blender.
4.   Mix up all seasonings and add some to blender with 1 cup of water.
5.   Pulse until all the ingredients are well blended.
6.   Continue to add seasonings and just enough water to moisten the mixture. The blended seasoning should be a little chunky not liquid.
7.   If blender is full, pour into bowl and continue process until all seasonings are processed.
8.   Add the vinegar to the bowl of blended seasoning and mix in.
9.   Fill into bottles, glass jars or even an airtight container and store in refrigerator.
10. You can also freeze the seasoning in ice cube trays and then store them in a zip bag in the freezer.




 Notes:
1. Frozen seasoning cubes can be used straight from the freezer without thawing unless you are using it for marinades.
2. Add or substitute other seasonings that you like and make it your recipe.

  2. Hi Lex. Give the green seasoning a try, it will surprise you. Chadon Beni is a highly flavoured herb that makes foods come alive (my opinion). Drop me line when you do.
